This is what they say. To me, all meals are important, I live to eat (duh), but breakfast is the meal where you can indulge (the most). It’s the thing I look forward to when I wake up in the morning (beside my crazy puppy licking my face with her stinky tongue).
And let’s not be racist. Although I would gladly pass on the century eggs in my congee, I love any kind of breakfast, even carbs. I’ve said it. Since when it is blasphemy to eat carbs really? I love you pancakes & maple syrup, toasts & salted butter, granola & yogurt. I also love bacon ; I know that’s not carbs, but its fat (omg, blasphemy again). Bacon is delicious. I digress again (bacon can distract you easily from anything you might be doing). Focus.
I wanted to share a recipe of coconut yogurt. If you are like me and you don’t want to spend a ridiculous amount of money in things that you can make your self and that taste better, then keep reading. I had given store-bought coconut yogurt a try some time ago and beside the outrageous price tag, it was not even good. It tasted like canned coconut milk that was refrigerated. No thanks. There is a healthy/green/conscious trend that has been going on for a while in HK that made everything labeled “organic” or “healthy” cost you an arm and I am not sure it is justified.
Then since I discovered my addiction to creamed coconut (or coconut manna), I made the most awesome coconut yogurt recipe where I use plain greek-style yogurt. It is probably the best yogurt I had in my entire life (I am not joking).
So instead of buying coconut yogurt with a huge unjustified premium, spend that money in good organic greek-style yogurt and in good quality ingredients that will last you a long while : a pack of chia seeds will last you forever and a jar of 500g of creamed coconut will make you in average 10 batches of 500ml flavored-yogurt (depends on how strong you like the coconut flavor in your yogurt). The mixed yogurt will keep as long as it is indicated on the package and you can mix it with anything you like.
Here I have my favorite coconut yogurt recipe which is using chia seeds, mango, passion fruit and my homemade granola. It tastes like vacation.
- - 1C Greek-style yogurt (or regular plain yogurt)
- - A splash of nut milk if you are using Greek-style yogurt and want to loosen the mixture
- - 1Tbsp Chia seeds
- - 2Tbsp creamed coconut (or to taste)
- - Sweetener like mild honey (optional. Personally, the sugar in fruits is good enough. Do not use strong honey as it will override the coconut flavor)
- - ½ mango, diced
- - pulp of 1 passion fruit
- - Homemade granola (my recipe in my post above)
- Mix all ingredients (except the granola) and serve with homemade granola and extra fresh fruits on top. Easy peasy
